HEALTH TIP – A DASH OF ALOHA

A fast and nutritious meal compliments from “A Dash of Aloha” cookbook, featuring healthy Hawai‘i cuisine from our friends at Kapi‘olani Community College’s Culinary Arts Department.

Sesame Noodles with Kale and Edamame:

2 to 3 servings

Buckwheat soba noodles 8oz.
Kale, or other green-leaf vegetable 1 large bunch (about 1 ½ lbs.)
Edamame (soybeans), shelled 1 cup
Toasted sesame oil 1 ½ tbsp.
Soy sauce, low-sodium 1 tbsp.
Sesame seeds, toasted 1 tbsp.

  1. Trim off thick stem from kale and slice the leaves into bite-sized pieces. Place in a bowl, rinse well and drain in colander.
  2. In a pot of boiling water, add noodles, edamame and kale. Be sure to submerge dale in water to cook evenly.
  3. Cook for 5 minutes or until noodles are done. Kale should be tender and edamame soft.
  4. Drain in a colander and rinse with cold water to cool down the noodles.
  5. Shake well to release all the excess liquid caught in the kale leaves.
  6. Toss the kale with toasted sesame oil and soy sauce.
  7. Garnish with toasted sesame seeds. Serve hot or room temperature.

Tip: Press a chunk of fresh ginger through a garlic press to release the juice. Add ginger juice to the noodles.
